Tempering is an important activity with foodstuffs. For some products, it is important to work as cool as possible in order to be able to deliver optimum quality. For other products, it can be essential that cross-links and crystal structures are produced at exact temperatures. And for other products, it may be necessary to reach particularly high temperatures for functionality or shelf life.
All these requirements can be met precisely with GLASS temperature control machines, which can be operated with a wide range of media such as water, oil, glycol, steam, cryogenic gases or vacuum.
The media can be guided around the product in a double jacket. Depending on the geometry of the tempering machine and tool, the heat transfer is optimized.
Some media can also be fed directly into the product to achieve the highest benefit. With direct-acting processes, the surfaces of the temperature control machines are generally free of buildup. Direct-acting processes also include the rapid cooling of hot products with vacuum. This enables a particularly efficient thermal treatment of foodstuffs.
For processes in the chocolate and confectionery industry, the precise maintenance of temperatures is particularly important.
When mixing chocolate, the desired crystal shapes only develop within a certain temperature window. The tempering machines from GLASS precisely maintain these temperatures.
Even with filling compounds and other compounds, the process temperatures must not be too high or too low. Therefore, specially designed mixers with the appropriate temperature control options are required.
